Spinach Salad with Apples and Pomegranate Seeds

3/4 cup GREY POUPON Classic Dijon Mustard
1 gal. apple
4-1/2 cups pomegranate
3 cups celery
1-3/4 gal. baby spinach leaves
1-1/2 cups pecans
