Vegetarian Poke Bowl

Vegetarian version of a poke bowl using roasted beets in place of fish. Beets and squash are marinated in sesame dressing and served with edamame, seaweed salad and green onions over rice. Garnished with chili mayo drizzle.

3 tsp. Soy sauce
12 cup Brown rice, cooked
12 cup Mixed salad greens
4 cup Roasted squash, 1 in. cubes
4 cup Roasted beets, 1 in. cubes
3 cup Edamame (shelled), cooked and shelled
1.5 cup Seaweed salad
1.5 cup Green onion, sliced thin
12 tsp. Nori furikake seasoning


Preparation Steps
  • Combine
    KRAFT PURE Mayonnaise, HEINZ Chili Sauce and soy sauce to make the chili mayo.
  • Toss
    The squash in half of the KRAFT Oriental Sesame Dressing. In a separate bowl, toss roasted beets in the remaining half of the dressing.

    Each serving:
  • Layer
    Salad ingredients in groups in serving bowl using 1 cup rice and 1 cup salad greens to form a bed.
  • Top
    With groupings of 1/3 cup beets, 1/3 cup squash, ¼ cup edamame beans, 2 Tbsp. seaweed salad, 2 Tbsp. green onion, 1-1/2 Tbsp. of the chili mayo mixture and a garnish of 1 tsp. nori furikake seasoning.
