Chilled Lentil and Chicken Salad

Grilled chicken combined with lentils, apples, almonds and blue cheese make a salad that will be sure to please.

Ingredients

24 each Boneless chicken breasts, 6 oz
4 tsp. Sea salt
2 tsp. Black pepper
5 lb. Lentil, cooked & chilled
1 doz. Egg, hard boiled & chopped
2 qt. Broccoli florets, blanched
3 cup Granny Smith apple, small dice
1.5 cup Sliced almonds, toasted
1.5 cup Green onion, sliced

Instructions

Preparation Steps
  • Season
    Chicken with salt and pepper.
  • Grill
    On medium heat until cooked through (165˚F).
  • Dice
    Chicken and refrigerate until ready to use.
  • Toss
    Together cooked lentils, eggs, broccoli, apples and PURE KRAFT Homestyle Blue Cheese Dressing.
  • Spoon
    1-1/2 cups salad mixture onto serving plate. Top with 1 diced grilled chicken breast.
  • Garnish
    With 1 Tbsp. almonds, 1 Tbsp. of scallions and 1 Tbsp. of shredded KRAFT CHEDASHARP American Cheese.
