Ingredients
8 cups Farro, cooked & cooled
4 cups Red quinoa
3.5 lb. Kale, finely shredded
4 cups White beans, drained & rinsed
2 cups Pomegranate seeds
2 cups Dried cranberries
2 cups Blueberries
12 cups Spring lettuce mix
2 cups Sunflower kernels
2 cups Sliced almonds, toasted
Instructions
Preparation Steps

  • Toss
    Together all ingredients except lettuce mix, sunflower kernels, and sliced almonds.
  • Chill
    In the refrigerator until ready to serve.

    Serve:
  • Place
    A ½ cup of lettuce into a chilled monkey dish. Spoon 1 cup of power salad on top.
  • Garnish
    With 1 tsp of toasted almonds and 1 tsp of sunflower kernels.
