Power Salad

This salad is not only packed full of flavor and texture, but the nuts, grains and greens provide lots of healthy benefits too. It's a win/win!

Ingredients

8 cup Farro, cooked & cooled
4 cup Red quinoa
3.5 lb. Kale, finely shredded
4 cup White beans, drained & rinsed
2 cup Pomegranate seeds
2 cup Dried cranberries
2 cup Blueberries
12 cup Spring lettuce mix
2 cup PLANTERS Sunflower Kernels
2 cup Sliced almonds, toasted

Instructions

Preparation Steps
  • Toss
    Together all ingredients except lettuce mix, PLANTERS Sunflower Kernels, and sliced almonds.
  • Chill
    In the refrigerator until ready to serve.

    Serve:

    A ½ cup of lettuce into a chilled monkey dish. Spoon 1 cup of power salad on top.
  • Garnish
    With 1 tsp of toasted almonds and 1 tsp of PLANTERS Sunflower Kernels.
