Roasted Sweet Potato Salad

Roasted sweet potatoes diced and mixed into a bound salad with green onion, bacon, blue cheese, Dijon, and cider vinegar.

Ingredients

36 oz. Sweet potato, cut into wedges
3 tbsp. Vegetable oil
3/4 cup Cooked bacon pieces
3/4 cup Green onion, sliced 1/8 in.
1 pinch Kosher salt, to taste
1 pinch Black pepper, to taste

Instructions

Preparation Steps
  • Preheat
    Convection oven to 350° F.
  • Toss
    Potatoes in oil and arrange in a single layer onto parchment lined sheet pans. Bake in convection oven for 20-25 minutes or until tender. Remove and let cool completely.
  • Toss
    Together potatoes with remaining ingredients until evenly combined.
  • Refrigerate
    Until ready to serve.
